This is the first new wheel I've ever bought. If it matters, the sticker says, "Quality Wheels front road rim brake 700c 100mm QR Alex (Da22 Black / Shimano Tiagra)". I have often removed used wheels, changed inner tubes, and put everything back successfully, but I'm wondering if there's anything different about new wheels?
Here's what I know:
I found a Sheldon Brown article about axles, so that'll help me make sure I don't put the springs on backwards when I put the axle through.
Here's what I don't know:
Rim tape: Does it matter which kind I get? Do I have to put the tube and tire on immediately after I install the rim tape? Is there good and bad technique for installing the rim tape? I wish Park Tool had a video on the subject....
What else is different about putting on a new wheel compared with the steps I follow when I change a flat?

I'm converting my 26" mtb into a gravel bike and am having a hard time finding properly sized tires. (1) Will 1.9 tires work on a bike that I've always put 2.1 tires on? It does not seem like a big difference to me. (2) Anyone have any tire suggestions? Thanks, y'all!
